1. In a small bowl, mix the Dijon mustard, honey, thyme, salt, and pepper. Brush this mixture over the apple slices and set aside.
2. Spread the softened butter evenly on one side of each slice of bread. This will be the outer side of the panini.
3. On the unbuttered side of two slices of bread, layer the sliced turkey, followed by the Swiss cheese, and then the honey-mustard glazed apple slices. Top with the remaining slices of bread, buttered side up.
4. Heat a panini press or a non-stick skillet over medium heat. If using a skillet, place a heavy pan or weight on top of the panini to press it down. Cook the panini for about 3-4 minutes on each side, or until the bread is golden brown and the cheese is melted.
5.Remove the panini from the heat and let it cool for a minute. Cut each panini in half and serve immediately.
