4 fresh tuna steaks
2 celery hearts, washed and chopped
2 tbsp olive oil
4 tomatoes, quartered, seeds removed
1 tbsp capers
3 tsps sugar
3 tbsp white wine vinegar
Pinch salt and freshly ground pepper
Heat the oil in a skillet, add the onion and cook over a medium heat for a few minutes. Add chopped celery and cook for a further 3 minutes until beginning to soften. Stir in the tomatoes and cook until tomatoes are pulpy, then add the capers, sugar and vinegar. Turn the heat up and cook until the vinegar has completely evaporated. Set to one side, while you heat a griddle pan, brush the tuna steaks with a little oil and cook steaks for 4 minutes each side. Serve the fish with celery mixture and scatter over chopped parsley.
