When I was living “South Of The Border”, I used to love getting breakfast tacos on the way to work. I had two favorites, chorizo, and eggs, or Carne de Mejilla (cheek meat) and eggs. But now being older and trying to watch my blood pressure I avoid those not so heart healthy breakfasts.

But here is a recipe that you can enjoy that is tasty and heart healthy. If you want to kick up the flavor then add a little coriander and a squeeze of lime. Coriander is very aromatic, taste great, and the twist of lime just enhances the flavor.

  • 2 eggs
  • 1 tbsp oil
  • 1 tortilla wrap
  • 1/4 cup cooked mushrooms
  • 1/4 cup tomato, roughly chopped
  • 1 spring onion, sliced

  • Directions:
  • Beat the eggs in a bowl
  • eat oil in a pan over a medium heat
  • Pour in the egg mixture
  • Gently stir the eggs until they form a soft set
  • Place the wrap into a chopping board
  • Add the scrambled egg, mushroom, tomato and spring onions along the center
  • Roll the wrap tightly, slice in half and serve
