Creamy Piquillo Pepper and Chickpea Soup with Chicken.

Cold temperatures and snow are still falling in many parts of the country. For me, there is nothing better on a cold winter day than a great bowel of soup. Try this heart-healthy recipe this week and let it snow, let it snow, let it snow.
- 1 c. piquillo peppers
- ¾ c. hummus
- 2 c. chicken or beef stock
- ½ c. white rice
- 1 c. rotisserie chicken
- Freshly ground pepper
- 2 tbsp. flat-leaf parsley
- olive oil
- Hot sauce
- In a blender or a food processor, combine the whole piquillos with the hummus and stock and puree until smooth. Transfer the soup to a medium saucepan. Add the rice and chicken, season with salt and pepper and bring to a boil. Ladle the soup into bowls and garnish with the parsley, sliced piquillos, olive oil and hot sauce.
