Cold temperatures and snow are still falling in many parts of the country. For me there is nothing better on a cold winter day then a great bowel of soup. Try this heart healthy recipe this week and let it snow, let it snow, let it snow.

INGREDIENTS

  • 1 c. piquillo peppers
  • ¾ c. hummus
  • 2 c. chicken or beef stock
  • ½ c. white rice
  • 1 c. rotisserie chicken
  • salt
  • Freshly ground pepper
  • 2 tbsp. flat-leaf parsley
  • olive oil
  • Hot sauce

DIRECTIONS

  1. In a blender or a food processor, combine the whole piquillos with the hummus and stock and puree until smooth. Transfer the soup to a medium saucepan. Add the rice and chicken, season with salt and pepper and bring to a boil. Ladle the soup into bowls and garnish with the parsley, sliced piquillos, olive oil and hot sauce.
