Ingredients

    • 2 cups flour
    • ¼ cup Splenda
    • 2 tsp baking powder
    • Pinch salt
    • 1 cup skim milk
    • 1 large egg
    • 4 tsp butter, melted
    • ¾ cup blueberries

 

Preparation

Pre-heat the oven to 400 degrees centigrade. Spray a 12 case muffin tin with low calorie cooking oil spray. In a bowl combine the egg, milk and butter. Pour in the flour bit by bit until the mixture is blended. Spoon the mixture into the muffin tin, filling each cup two thirds of the way up. Bake in the oven for 20 to 25 minutes. Check that the muffins are cooked by inserting a skewer into them – it should be completely clean – and the muffins will be golden brown in color. Once cooked allow to cool on a wire rack, remove from the tin and serve straight away.
