Skim milk is a heart-healthy provider of calcium and vitamin D – two nutrients that are believed to work together to reduce blood pressure by up to an estimated 10 percent.
By incorporating low fat milk into your diet you could be reducing your risk of getting cardiovascular disease by as much as 15 percent. - 2 cups flour
- ¼ cup Splenda
- 2 tsp baking powder
- Pinch salt
- 1 cup skim milk
- 1 large egg
- 4 tsp butter, melted
- ¾ cup blueberries
Pre-heat the oven to 400 degrees centigrade. Spray a 12 case muffin tin with low calorie cooking oil spray. In a bowl combine the egg, milk and butter. Pour in the flour bit by bit until the mixture is blended. Spoon the mixture into the muffin tin, filling each cup two thirds of the way up. Bake in the oven for 20 to 25 minutes. Check that the muffins are cooked by inserting a skewer into them – it should be completely clean – and the muffins will be golden brown in color. Once cooked allow to cool on a wire rack, remove from the tin and serve straight away.
